Q.  Why is Squirrel Mail Auto Responder using the wrong email address
for me?

A.  It will use the default name for the computer (host) that Squirrel Mail
is running on which might not be what you expect.

Go to Options > Personal Information

and enter your Full Name and Email address to change things.
(You need to enter both).
